Healthy Eating for the New Year with Randox Health and The Ivory Belfast

1. Breast of Smoked Duck, Spiced Quinoa Salad with Avocado & Pomegranate (Serves 4)Quinoa Preparation
200g Quinoa
400ml Vegetable Stock
1 Teaspoon Harissa Paste

Salad Preparation
1 Whole Pomegranate (deseed and discard flesh)
2 Avocado (roughly diced)
100g Mesclun
1 Banana Shallot (finely sliced)
1 Smoked Duck Breast (finely sliced).
2 Tomatoes (Diced)

Dressing Preparation
100ml Coconut Oil
20g whole grain mustard
30ml Honey
30ml Lemon Juice

Quinoa Method
Boil vegetable stock and quinoa together until stock has completely evaporated. Add the Harissa paste to this and stir vigorously. Leave to cool.

Dressing Method
Mix the honey, mustard and lemon juice. Whisk in the coconut oil to create an emulsion.

Building the Finished Salad
Combine the salad ingredients in a large mixing bowl, add the dressing, mixing thoroughly and finish with the Duck Breast slices on top of the salad. (Et Voila).

2. Iron Up Your Smoothie

Ingredients
250ml Apple Juice
2 Granny Smith Apples
100g Baby Spinach
200g Tender Stem Broccoli

Method
Add all ingredients to a food blender and blend until smooth.

3. Root Vegetable Crisps

Ingredients
1 large Carrot
1 large Parsnip
1 Beetroot
20ml Coconut Oil

Method
Peel all root vegetables, (using a speed peeler), and leave to one side.
Thoroughly clean peeler and peel fine, alternating length strips of all root vegetable and coat with coconut oil.
Cook at 110C for three hours. Leave to cool and then enjoy!
